Finally I saw the live demo of Indian filler coffee at friend’s home in Taiwan~ Also not until today did I realize what makes the Indian filter coffee different from normal coffee available in Taiwan convenience stores.

Without the coffee machine to steam milk in an extremely short time, the traditional way to serve filter coffee takes time to boil milk fully, also through this process, some water evaporates, which brings out the taste of milk even more, here I would said, milk is also a key point to make a good filter coffee!

That’s how the bubble comes!

Whole milk is a must, and if you are in Taiwan, you may ask your local friends about the quality brands, as the big brands used in convenience stores or stxxbxxx are just like diluted lol and Velmurugan family knows so well in this regard ;)

Chana daal is more preferred in Tamil Vada as main ingredient, and very crispy in texture!!!

When it’s cold and raining outside, Velmurugan family especially loves this coffee with homemade vada, along with TV or music, which makes the perfect afternoon tea !

印度滴漏咖啡(Indian filter coffee)是印度一種甜牛奶咖啡,在南印度特別風行,在南印,這種咖啡是從黃銅過濾壺裡緩緩滴漏出來的。準備咖啡時,咖啡師從金屬罐中舀出糖,放入一杯咖啡裡 — — 加熱好的咖啡就放在櫃檯旁邊的爐子上,再兌上一小杯當地產的全脂牛奶 — — 將三者充分攪勻,之後手舉得高高的,將混合飲料在兩個罐子裡反復倒來倒去,頗有拉茶異曲同工之妙-讓它儘快涼下來。

對平常都喝熱美式的我,如果一旦要喝有牛奶的咖啡,牛奶的選擇就很關鍵;今天到朋友家,一拿出來的牛奶是四方我就知道是行家 XD

今天看朋友live demo才知道: 原來還有一個撇步讓印度牛奶咖啡風味如此濃郁 — 朋友說關鍵在完全煮沸的牛奶 — 他說台灣很多便利商店咖啡加的牛奶只是用蒸氣讓牛奶熱,其實不見得完全煮沸。煮沸過程中水分蒸發也是讓奶香更濃郁的關鍵。

看他流暢地在兩個杯子裡面輪流倒咖啡,形成美麗的泡泡覺得真是藝術啊~
他說平常在台灣天氣陰冷時,特別適合在家裡,準備好鹹鹹圈Vada跟印度滴漏咖啡,熱熱上桌,配上電影或是音樂,那就是最完美的下午茶時光了。
